Queso Dip - White Mexican Cheese Dip

Mexican queso dip is a delicious, creamy white dip, which is just as good with corn chips and tortilla chips as it is added to burritos, enchiladas, and tostadas. You might like to try making your own queso dip if you are a fan of authentic Mexican food recipes because this recipe is Mexican through and through, not a Tex-Mex hybrid.
You can get queso dip in grocery stores, of course, but it simply does not compare to a homemade white Mexican cheese dip. If you want to try a store-bought one first, to see whether you like it, try Gordo's Queso Dip. You can get this in Wal-Mart and similar stores and it comes in mild, medium, and hot varieties.
Queso dip is also known as "chili con queso" which can be confusing because chili can also refer to chili con carne, which, as you know, is a meat dish. The "chili" in this sense refers to the chili peppers used to make the dip. You can use green chilies, ancho chilies or jalapeno chilies to make this cheese dip and you can use as much or as little as you like, depending how spicy you want the finished recipe to be.
Recipe for Authentic Queso Dip
Mexican Asadero cheese is the best type to use for making this cheese dip recipe. If you cannot find it, you can use Chihuahua cheese or Monterey jack instead. The Monterey jack will give more of a Tex-Mex flavor to the dip, but the other two are more authentically Mexican. This sauce makes enough for two people, so double the recipe if need be.
What you will need:
  • 4 oz finely chopped green chilies
  • 2 teaspoons ground cumin
  • 1 cup finely shredded Asadero cheese
  • 1/4 teaspoon salt
  • 2 tablespoons finely chopped onions
  • 1/4 cup Half & Half
How to make it:
Add the chilies, cumin, cheese, salt, onions, and Half & Half to a double boiler and warm it over a moderate heat, stirring it well until everything is well blended together. Serve it with hot flour tortillas, tostadas, chips or as a sauce for burritos, tacos or your favorite Mexican dish.

You can serve queso dip with so many different authentic Mexican food recipes.
