Mexican Treats - How to Make Sweet Quesadillas

Quesadillas usually refers to a savory Mexican food recipe. A quesadilla is a snack made by putting cheese inside a tortilla and cooking it until the cheese melts. "Queso" is Spanish for cheese and the word literally translates as "cheese cake" or "cheese tortilla."
Different Types of Quesadilla Recipes
Quesadillas vary throughout Spain and South America. In Mexico, a quesadilla is a circle of cooked corn masa, which is folded in half and stuffed with cheese. The quesadilla is cooked until the cheese melts. In the north of Mexico, wheat flour tortillas are often used instead of the corn ones.
Mexicans sometimes add meat, vegetables, or mushrooms to their quesadillas. Mexican quesadillas are usually cooked on a "comal" which is like an electric grill. They can also be deep fried in oil, which makes them very crunchy.
Dessert Quesadillas
If you want to make sweet quesadillas instead of savory ones, you can use cream cheese as the filling and fruit, caramel, chocolate, marshmallows or anything else that goes nicely with the cheese flavor. Cream cheese can be used in sweet or savory recipes and if you beat it with powdered sugar, it makes the perfect filling for a quesadilla recipe.
Fruit is wonderful with dessert quesadillas and you can use bananas, strawberries, peach, plum, raspberries or anything else you like. Homemade cajeta, or caramel sauce, is an authentic Mexican accompaniment for dessert recipes like this.
Recipe for Banana and Strawberry Quesadillas
These quesadillas are filled with sweetened cream cheese and bananas and then fried until the filling is hot and gooey. They are served hot with warm caramel sauce, as well as fresh fruit, whipped cream and fresh mint sprigs. This Mexican dessert recipe makes a great treat for the kids and it is also elegant enough for a dinner party dessert. This recipe serves eight people.
What you will need:
  • 1 lb softened cream cheese
  • 6 bananas
  • 1/2 pint hulled strawberries
  • 4 tablespoons butter
  • 1/2 cup powdered sugar
  • 1 cup white sugar
  • 1/2 cup water
  • 1 cup heavy cream
  • 10 flour tortillas
  • Whipped cream, to serve
  • Fresh mint sprigs, to serve
How to make them:
Beat the cream cheese until smooth, then add two of the bananas and the powdered sugar and beat again. Spread a quarter cup of this filling over half of each tortilla, then fold the other side over the tortilla. Transfer the filled tortillas to a plate and cover them with plastic wrap. Chill them in the refrigerator until the filling sets. This will take about half an hour.
Combine the white sugar and water in a pan over a moderate heat to make the caramel sauce. Bring it to a boil, stirring often, and keep cooking until the mixture is syrupy. This will take about fifteen minutes. Take it off the heat and stir in the heavy cream. Return the pan to the heat and boil the sauce for a couple of minutes, until it is thick again.
Melt one tablespoon of the butter in a skillet over a moderate heat, then pan fry the tortillas, three at a time, until they are golden brown on both sides. Repeat with the remaining butter and tortillas. Slice each tortilla into three wedges and serve with the caramel sauce, strawberries, and remaining bananas, whipped cream and fresh mint.
