How to Make Yogurt Cheese For Your Favorite Recipes

Yogurt cheese is easy and fun to make! You can use it in all your favorite recipes that you use cream cheese, sour cream or mayonnaise in. You can also make vegetable dips and sandwich spreads with your yogurt cheese. All you need is yogurt and a strainer.
o Use 1 quart of plain yogurt. Be sure and check the label for gelatin. Gelatin keeps the whey from separating from the curds so get a brand that doesn't use gelatin or sweeteners.
o Line a strainer with cheesecloth, coffee filters or even paper towels. Spoon the yogurt in the strainer over a bowl. Lay more cheesecloth or paper towels over the yogurt and place a small plate on top. This adds just a little weight to help press the whey out.
o You can leave this out on the kitchen counter or put it in the refrigerator. Just make sure pets will not be able to get into it or you won't have any yogurt or cheese! This can be left out from 8 hours on up to 24 hours. It just depends on how dry you want the texture of the cheese.
o After it has drained, put the whey in a small jar and refrigerate. Whey is packed full of nutrients. You can use 1-2 tablespoons of whey in water to soak beans or grains to reduce the phytic acid that causes so many digestive problems. The whey will keep for 6 months refrigerated.
o The yogurt cheese is now ready to use in your favorite recipe or you can just put it in a covered bowl and keep in the refrigerator. Use it a bit at a time if you wish for dips or spreads.
You can flavor your yogurt cheese by stirring in herbs before or after draining. Garlic, dill, salt, pepper and even mint are favorite herbs to season yogurt cheese with.
