I love spinach and collard greens. I fell in love with them when I learned how nutritious they are-chock full of magnesium, vitamins K, A, and C, manganese and folate. I needed a calcium and magnesium rich diet to correct these deficiencies. Eating greens everyday has made me feel better, brightened my mood and reduced the magnesium deficiency symptoms.
Here is a simple and easy recipe to enjoy greens:
Ingredients:
½ of a small onion
Leftover steak, cut in small pieces
1 package spinach or your favorite greens
2-3 eggs, beaten (this is for 1 omelet)
Cheddar cheese, shredded
Optional toppings: sour cream, guacamole, avocadoes, tomatoes
Step 1: Sautee the onions and steak in a bit of healthy fat like olive oil, coconut oil or grass-fed butter or lard. Add the greens and sautee until wilted. Add ½ cup of water or more if needed. Cover and cook for 10-15 more minutes. Spinach cooks quickly, but other greens may take a little longer.
Step 2: Make your cheese omelet. Melt butter in a skillet and pour the beaten eggs in. Sprinkle cheddar cheese over the eggs. When the eggs are fluffy and cheese is melting, fold the omelet over on itself. Cook for 1-2 minutes, then flip again and cook 1-2 minutes more.
Step 3: Slide the omelet onto a plate. Top with the steak, onions and greens. Add a dollop of sour cream, guacamole, sliced avocadoes, or diced tomatoes.
This recipe is one of my favorites for lunch. It's easy, quick and you can feed at least 2 people, more if you cook more greens. It's a great way to get a lot of nutrients into a small meal and feel satisfied and healthy.
