My Spinach Artichoke Dip Recipe

Who wouldn't like a creamy, healthy dip? The spinach artichoke dip is all American. It's not exactly diet food; but it's brimming with nutrients. While spinach is known for its nutritious supply of essential vitamins and minerals, artichokes boost our body with anti-oxidants. As a combined force, these two vegetables fill our body with vitamins A, C, E and K and help in lowering cholesterol levels.
This dip is a great way to make children and sometimes choosy adults eat their spinach. Some people may not like the taste of artichokes; but they'll definitely like a well made spinach artichoke dip because you'll never taste artichokes in it. This makes a great party dish because not only is it easy to make; you can also make this dip in bulk and store it. It can survive many days in the freezer.
The spinach artichoke dip could be served hot or cold. Just serve it along with chips, crackers or with neatly cut vegetables that make it a wholesome meal. Or combine it in a casserole with lots of cheese and bake it to make a tasty dish that'll disappear in seconds. Just make this dip a day before a big game or when it's snowing and everyone's at home. It's guaranteed to bring you all together.
Many people think this is an exclusive restaurant dish and don't make the attempt to make this dip at home; It's only when you try that you'll realise how easy it is to make a healthy spinach artichoke dip that can be customised the way you want. What's more, you could just make and reserve it for lazy days.
Here's my recipe for spinach artichoke dip that's easy to make and great to taste.
You'll need -
  • Marinated artichoke hearts - cut into pieces and drained - 6 ½ oz
  • Cut onion - 2 tbsp
  • Frozen chopped spinach (thaw and drain this before using) - 10 oz
  • Butter or margarine at room temperature - 1 tbsp
  • Parmesan cheese - ¼ cup (grated)
  • Shredded Colby cheese - 2 cups
  • Milk - ½ cup
  • Creole seasoning - ¾ tsp
How to proceed-
  • Sauté onion pieces and artichokes in butter till the onions get soft.
  • Mix in Parmesan cheese and spinach. Keep the heat low and stir till spinach is cooked.
  • Now, blend in the Colby cheese, Creole seasoning and milk. Cook till the cheese fully melts.
Your hot spinach artichoke dip is ready. Transfer this to a serving bowl and serve with crackers, tortilla chips, finger vegetables or toasted slices.
