3 Quick and Simple Meal Ideas

When you have a family you never seem to have enough time. One activity that can take up a lot of time is cooking the evening meal. With this in mind I have a few simple recipes idea's that while basic are healthy and great tasting.
1) Chicken Tortillas
You will need to buy from your local Leonards or similar chicken provider and buy a kilo of their chicken stir fry (my favorite is chicken satay) - this saves a heap of time as you will now only need to fry it up. While there buy a packet of tortillas, a lettuce, tomato and cheese if you have none at home.
Preparation consists of heating up a pan and putting in the chicken. While that is cooking it is easy to make up a plate of cut lettuce, one of sliced tomato, grated cheese, and the heated tortillas (30 sec. in the micowave is all that is need to freshen them up). Put them all out on the table. By this time the chicken will be down. Put into a bowl and serve on the table. Allow the family to make up their own tortillas - helping out younger children under 5. I do it this way - lay a tortillas on the plate and put a line of hot chicken down. I then put a line of cheese on top (love my melted cheese). I then put the tomato (sliced, then sliced in half again) and finally the lettuce. Fold up the bottom of the tortillas and then roll up - eat and enjoy. The clean up isn't hard, a few plates, bowls and a one frying pan.
2) Haystacks
Similar idea, but instead of tortillas and chicken you will be using beans, nachos and sour cream. Otherwise you will need a lettuce, tomato and cheese again - this time at least half the cheese should be mozzarella.
Get your favorite can of Mexican beans - we normally use beef and chilli beans. Heat in a pot.
Get a large pizza dish and lay them a bed of nachos chips. Pour a lot of grate cheese on top - if you use mozzarella it will help keep the chips together. Place under a grill. When cheese is melted (and before the nachos burn) remove. You serve out the nachos and cheese, put on the hot beans, and then tomato, lettuce, and/or sour cream as the individual likes. (you can skip the lettuce if you want). Tastes great.
Clean up - serving plates, one pot and one pizza dish.
3) Baked Bean Buns
This is the easiest yet. Cut a Hamburger bun in half. Cook a can of baked beans in a pot on the stove. When hot spoon beans onto the bun, put cheese on top - place under griller. Eat. Clean up - one pot, serving plates. Extra tip - Use aluminum foil always when grilling - saves cleaning melted cheese out of the oven.
These meals are easy to make and taste great. If you want to lower the cal. - use a low fat cheese, or cut the cheese and sour cream out all together.
